Week 17 Continued

Week 17

I like:  Being the center of attention...Quinn loved being with his family this week! 
Dislike:  14 hour road trips!  Yucky
Sleeping patterns:  Naps...sometimes he takes good ones sometimes he doesn't.  Whatever he feels like that day :)  One thing I can count on is a bed time around 7pm!  Good baby
 
Milestones:  BIG NEWS....we had our first real laugh FINALLY!  It's what I imagine angels to sound like when I enter those pearly gates....the most beautiful noise to my ears!  It was so cute :)
 
Quinn is also scooting on his back!  I have to be on watch at all times now. 

Week 16

I like:  Quinn loves playing with his feet and enjoys being out in public....this kid loves to people watch!  He learned from the best :)   
Dislike:  Quinn is not a fan of the pacifier anymore.  He would much rather jam all 5 fingers in his mouth at once #toocute! 
 
Sleeping patterns: 7pm-7am at night...super baby *he wakes once for a feeding during the night.

Milestones: Quinn's hair is growing!  Looks like he will have blonde hair...just like Daddy :)  #daddysminime.

My Birthday Boy!


So I'm kind of famous "with my husband" for my Chicken Pot Pie!  So being the lovely wife that I am I make it for his Birthday every year. 
 

2 cups flour, 1/3 cup water, 1 teaspoon salt, 1 tablespoon sugar, and 2 stick...yes 2 stick of butter cubed
 

Mix all in the food processor
 

Knead together...DO not over knead!
 

Now for the Chicken...some butter, garlic, and italian seasoning.
 

Mix up
 

Roast chicken at 325 degrees for 1 hour
 

Hello my perfect chicken pot pie bowls!  We meet again :)
 

Saute chicken, broccoli, carrots, and garlic in Olive oil.  Set aside.  Then make a rue (butter and flour) pour 2 cups of chicken stock and 1/2 cup of cream and let thicken; don't forget to salt & pepper.  Simply place all of the above ingredients in the bowls.
 

Place the yummy dough on top...be sure to eat some dough it's so TASTY :)

For dessert homemade dark chocolate and peanut butter cups with a little wine!  Perfect end to the hubby's 29th Birthday!

Week 15


I love having an audience while cooking...makes me feel like Giada! 
*I bought Quinn the Lobster by Phil & Teds...he loves it!  Can't wait to use it on the go.

I like:  Going shopping with mommy. 
Dislike:  Quinn had a bad eye infection this week.  We had drops from previous eye infection so I tried those, they didn't work and on day 6 I took him to the doctor.  We recieved different drops and they worked just great!  Thank goodness, I hate to see my baby hurting. 
*I even tried breastmilk (miracle drug) in his eye but they didn't help.   
 
Sleeping patterns: 7pm-7am at night...super baby

Milestones: Quinn can now grab both feet at once.

My favorite kitchen utensil right now...

Okay so here's the deal...I've had this "Lodge" cast iron skillet sitting in my pantry for a good year - Bradford's grandma gave it to me but said it needed to be seasoned before I use it.  Seasoned, "what in the world did that mean?"  So I placed it in my pantry and never thought about it again :(  Until I saw my lovely Mother-in-law using hers...I thought hmmm I should really get mine out and use it.  So that is what I did; I googled how to season a cast iron skillet.  It's so easy you preheat your oven to 325 degrees and cover the pan with canola oil then bake for an hour...that's it!

Thus my love affair with my cast iron skillet has begun...I cook everything in it!  Don't get me wrong I still LOVE my Pampered Chef "everything" (I'm a Pampered Chef-a-holic) but anything I can cook in this skillet I do...here are a few examples


Gluten free cornbread...I use Bob's Red Mill mix.  Best I've found so far...still experimenting.

The Hubby taking it 'Old School'...both of our Grandpa's did this.  You mix your cornbread with milk...Bradford's Papa takes it to another level and adds Raw Onions.  Ewe no Thank YOU!!! 

Gotcha!  He enjoyed it :)


Ok now I'm just looking for things to cook...I decided to make breakfast burritos to store in the freezer for when we are in a hurry.  I cooked the sausage and eggs in the skillet then you just rinse with water!  Easy cleanup my fav :) These burritos were so easy and kind of fun!

Love a stocked freezer!  I have learned convience is priceless when you have a 3 month-old!
